ABOUTEVENING GONGFU completes our signature
GONGFU collection and represents the final stage of a tea journey inspired by the rhythm of traditional Western tea culture. Following the success of
MORNING GONGFU and the elegant refinement of
AFTERNOON GONGFU, we wanted to create a blend dedicated to the quieter hours of the day, a tea designed for slowing down, reflection, and comfort. Like the other teas in the collection, EVENING GONGFU is made exclusively from pure Camellia sinensis and carefully selected teas of the highest quality, without additives, flavorings, or artificial ingredients.
The philosophy behind this blend was to create a tea that offers depth and complexity without demanding attention through intensity. Instead of focusing on strength and energy, EVENING GONGFU explores smoothness, warmth, softness, and harmony. Through the careful combination of different tea styles and origins, we sought to create a profile that feels comforting and familiar while continuing to reveal subtle layers of aroma and flavor throughout the session.
Created to perform equally well in both Eastern and Western brewing styles, EVENING GONGFU offers versatility. Prepared in a teapot, it produces a smooth, balanced, and comforting infusion suitable for everyday enjoyment. Brewed Gongfu style, it reveals a more nuanced and evolving character, gradually unfolding layers of sweetness, fruit, honey, and gentle spice notes.
Together with MORNING GONGFU and AFTERNOON GONGFU, this blend forms a complete collection exploring three distinct expressions of tea culture through the art of blending. While MORNING GONGFU celebrates vitality and structure, and AFTERNOON GONGFU highlights elegance and refinement, EVENING GONGFU focuses on balance, relaxation, and quiet enjoyment. The result is a trilogy of teas that demonstrates how blending can complement the principles of high tea culture while creating new and meaningful tea experiences.
ORGANOLEPTICSThe dry leaves display a harmonious blend of carefully selected teas, combining deep brown, golden, and copper tones that reflect the diversity and balance of the composition. Their appearance suggests warmth and comfort while preserving the elegance expected from teas of the highest quality. The aroma of the dry leaf is soft, inviting, and richly layered, offering notes of wild honey, dried fruits, baked apples, sweet spices, caramelized sugar, cocoa, and delicate floral nuances. In a preheated teapot or gaiwan, the aroma becomes increasingly comforting and expressive, revealing additional notes of raisins, dates, warm pastries, vanilla, roasted nuts, cinnamon, and subtle woody undertones. As the leaves awaken, the aromatic profile develops remarkable depth while maintaining a smooth and soothing character.
The liquor is bright, clear, and luminous, displaying a warm amber-red hue. The aroma of the infusion is gentle yet complex, combining notes of honey, dried fruits, baked apples, sweet grains, cocoa, warm spices, and delicate floral accents. The texture is exceptionally smooth, round, and velvety, coating the palate with warmth and softness while maintaining clarity and balance. The taste unfolds gradually, revealing layers of honey, dates, raisins, caramel, baked fruits, roasted nuts, light cocoa, and subtle spice nuances. Unlike more energetic tea styles, the flavor profile focuses on harmony and integration, creating a calm and deeply satisfying tea experience that remains engaging throughout multiple infusions.
The aftertaste is long, smooth, and comforting, leaving lingering impressions of honey sweetness, dried fruits, gentle spices, and warm pastry-like notes in the mouth and throat. As the session progresses, the tea becomes increasingly rounded and integrated, revealing greater softness and depth with each infusion. In the empty cup, the aroma remains highly expressive, offering lingering notes of wild honey, baked apples, dried fruits, vanilla, cocoa, sweet spices, and delicate floral undertones that beautifully reflect the tranquil character of EVENING GONGFU.
GASTRONOMYEVENING GONGFU pairs beautifully with comforting desserts and light evening treats. Its smooth texture, honey sweetness, and gentle notes of dried fruits and warm spices complement baked apples, fruit pies, honey cakes, shortbread, oatmeal cookies, almond pastries, and desserts featuring caramel, cinnamon, or vanilla. The tea enhances these flavors without overwhelming them, creating a relaxed and harmonious pairing ideal for the final hours of the day.
The blend also works exceptionally well alongside soft cheeses, roasted nuts, dried fruits, and light savory dishes. Mild cheeses, toasted bread, baked vegetables, and delicate vegetarian preparations benefit from its rounded texture and balanced aromatic profile. The natural sweetness of the infusion helps soften savory elements while maintaining freshness and elegance on the palate.
Its calm and approachable character makes EVENING GONGFU an ideal companion for quiet evenings, whether served with food or enjoyed on its own. Together with MORNING GONGFU and AFTERNOON GONGFU, it reflects a different chapter of traditional Western tea culture, offering a slower and more contemplative tea experience.
