WHITE SNOW SHAN by AN SHIM TEA

ABOUT
WHITE SNOW SHAN is a Vietnamese white tea produced in the Lùng Vài area of Hà Giang, located in northern Vietnam at an altitude of around 1100 meters. It is made from buds of old tea trees belonging to the Shan Tuyết variety, also known as “Snow Shan,” which is naturally adapted to high mountain conditions. These trees develop dense, resilient buds covered with fine down, contributing to both the visual identity and internal structure of the tea.

The production follows the classical white tea method, involving minimal processing without rolling or shaping. After careful harvesting, the buds undergo controlled withering and slow sun-drying, preserving their natural composition while allowing gentle internal transformation. This approach maintains clarity and purity, while the mountain-grown material provides additional depth and stability.

It is valued for its balance between softness and structure, combining the delicacy of bud material with the intensity of Shan Tuyết variety. The tea reflects both the natural conditions of Hà Giang and the precision of traditional processing, offering a refined and authentic expression of Vietnamese white tea.

TERROIR
Our WHITE SNOW SHAN is harvested in Lùng Vài area of Hà Giang in northern Vietnam, at elevations around 1,100 meters. The region is characterized by a humid mountain climate with frequent mist, high humidity, and notable day–night temperature variation. These conditions slow the development of early spring buds, allowing for the accumulation of aromatic compounds while preserving clarity and softness.

These trees develop deep root systems that access a wide range of minerals, while the surrounding natural vegetation supports a stable ecological balance. The soils are typically well-drained, slightly acidic, and rich in organic matter, contributing to both the density and structural integrity of the buds. Microclimate plays a defining role, with diffused sunlight, cloud cover, and constant air movement regulating plant metabolism. This results in a balanced composition of amino acids and polyphenols, providing both sweetness and gentle structure.

Another important aspect is the interaction between natural conditions and traditional harvesting practices. The buds are carefully selected within a limited seasonal window, ensuring optimal maturity and quality. Combined with minimal processing, this allows the tea to express both the highland terroir of Lùng Vài and the distinctive character of ancient Shan Tuyết tea trees.

ORGANOLEPTICS
The dry material consists of slender buds covered with fine silvery down, showing a pale green to silver tone with a slightly dense and resilient structure typical of Shan Tuyet origin. The aroma of the dry buds is clean and refined, with notes of fresh hay, wildflowers, and a soft honeyed sweetness. In a preheated teapot, the buds open gradually from the first infusion, releasing a delicate yet expressive aromatic profile where floral tones are supported by gentle vegetal freshness and a subtle creamy nuance. As the infusion develops, the aroma becomes more integrated, combining soft sweetness with a calm, slightly mineral and airy character.

The aroma of the liquor is light and transparent, with a harmonious combination of floral notes, gentle sweetness, and a faint mineral undertone. The taste is smooth and structured, with a light to medium body and a soft, slightly viscous texture. A natural sweetness forms the core of the profile, supported by delicate floral tones and a very mild, well-integrated astringency that adds precision. The Shan Tuyet origin contributes a subtle cooling sensation and clarity in the finish. The aftertaste is clean and moderately persistent, with a returning sweetness and a soft mineral impression. In the empty cup after drinking, a delicate sweet and floral aroma remains, leaving a refined and balanced final impression.

"WHITE SNOW SHAN is unlike any other Silver Needle-style white tea in our collection. Its distinctive character comes from the Shan Tuyết variety and the ancient tea trees from which it is produced. Every year, we personally oversee both the harvesting and the production process to ensure that each batch meets the standards we expect from this exceptional tea.

Produced exclusively from the first spring buds of ancient tea trees, this tea represents the finest material of the year. Careful withering and traditional sun-drying preserve its natural character while providing excellent aging potential, allowing the tea to develop greater depth and complexity over time. Among the many Silver Needle teas I have tasted throughout my career, this remains one of the most memorable, offering a sweeter, deeper, and more expressive profile that clearly reflects its mountain origin and remarkable raw material."
