ORIGIN
Ebony Springs Tea Gardens is a tea farm located in Nawalapitiya, Sri Lanka, known for producing high-quality single-estate teas. The farm is owned and operated by Bernard Holsinger, a veteran tea planter with over 50 years of experience in the industry. Ebony Springs has a rich history of producing some of the finest teas in the region, using traditional methods and techniques passed down for generations. The teas produced at Ebony Springs are unique because they are single-estate teas, meaning they are grown, harvested, and processed on the same farm. This results in teas with distinct characteristics and flavors that are not found in blended teas from multiple farms. The farm is located at an altitude of just below 600 meters.
ORGANOLEPTICS
The aroma of the dried leaves is soft and sweet, with fruity, citrus notes as well as floral and honey motifs. The aroma of warmed tea leaves continues with vanilla, and bakery motifs, with some notes of baked fruit. Rinsed tea leaves reveal soft and moderate notes of honey, herbal, and wildflowers.
The taste is sweet, soft, and velvety, with honey, floral, and sugar notes. It refreshes and quenches thirst very well while giving unique gastronomic pleasures with its extraordinary taste and aroma. The color of the infusion turns out to be truly white, with a slight jade tone. The tea leaves a very long, pleasant, soft aftertaste. The taste is clean, transparent, at the same time deep and multifaceted, enveloping with its tenderness and warmth. The tea is unique and extraordinary, unlike any white tea I have ever tried. Due to the complexity of the process and limited production, this tea is a unique pearl of our collection.
