ABOUT
Japanese red tea, known as Wakoucha, represents a rare and refined expression of Japan’s tea craftsmanship. Unlike the more familiar green teas, Wakoucha undergoes full oxidation, revealing a warm, amber liquor and a gentle sweetness that reflects the harmony of Japanese terroir. It is produced in small quantities across different prefectures, where local cultivars, soil, and climate give each tea its own unique character - from floral and light to deep and honeyed.
The Japanese Breakfast blend was created by AN SHIM TEA as a tribute to this emerging tradition. During the 2025 Japan Expedition, we explored various tea regions and discovered exceptional small-lot red teas that spoke of purity, craftsmanship, and place. Blending them became an artistic process — balancing aroma, texture, and warmth to capture the spirit of Japan in one harmonious cup. The result is a tea that unites depth and brightness, inviting calm focus and gentle awakening with every sip.
ORGANOLEPTICS
The dry leaves of Japanese Breakfast are long and twisted, showing deep brown and golden tones with a warm, sweet aroma of honey, roasted grain, and soft wood. When warmed, the fragrance expands with notes of dried fruit, caramel, and subtle hints of cocoa.
The infusion is clear reddish-amber, radiating a comforting sweetness and gentle nutty aroma. On the palate, the tea is smooth and balanced - offering layers of honey, baked bread, and light malt intertwined with delicate floral undertones.
