ABOUT
Gaba Jade is a green tea from Mingjian in Nantou County, Taiwan, produced from an early spring harvest collected at the end of March, before the Qingming period. This places it within the category of Ming Qian teas, valued for their tenderness, clarity, and refined aromatic profile. The tea is made from the Jin Xuan cultivar, widely known for its use in Taiwanese wulong production, but here adapted to a green tea style with the application of GABA processing.

The leaves are carefully hand-picked and undergo light withering before entering a controlled anaerobic environment, where oxygen is replaced with nitrogen for approximately 12 hours. This stage stimulates the natural formation of GABA within the leaf. Afterward, the tea follows a green tea processing path, including heat fixation to stop oxidation, shaping, sun-drying, and final drying to stabilize the moisture content. Unlike GABA wulong teas, oxidation is kept minimal, resulting in a lighter, cleaner profile that combines the freshness of green tea with the rounded softness characteristic of GABA processing.

ORIGIN
Mingjian Township, located in Nantou County, is one of Taiwan’s key tea-producing areas, particularly recognized for its consistent production and experimental approach to processing techniques. The region lies at relatively low to mid elevations, with a warm climate and stable growing conditions that allow for multiple harvests per year. These factors make Mingjian especially suitable for the production of GABA teas, where precise control over leaf maturity and processing timing is essential. The local expertise in both traditional and innovative methods has positioned Mingjian as one of the main centers for GABA tea development in Taiwan.

ORGANOLEPTICS
Gently rolled leaves of a deep green tone with a slight matte finish. The aroma is soft and clean, with notes of fresh grass, young spinach, and a subtle hint of sweet corn. When placed in a preheated vessel, the leaf opens with a rounder and more expressive profile, revealing steamed greens, warm grains, and a light fruity nuance reminiscent of ripe pear.

The liquor is clear, pale green with a delicate yellow tint. The aroma is calm and refined, combining vegetal freshness with a мягкая сладость and a faint lactic softness typical of GABA processing. Smooth and balanced, with very low astringency. The profile moves from fresh vegetal tones to gentle sweetness, with nuances of green beans, steamed greens, and a light creamy texture that softens the structure. Clean and steady, leaving a mild sweetness and a soft, calming sensation. The overall impression is composed and harmonious, combining the clarity of green tea with the rounded character of GABA processing.
