ABOUT
Bai Ye Dan Cong belongs to the famous family of Chaozhou wulongs from Guangdong Province in southern China, a region regarded as the birthplace of Dan Cong tea. The name Bai Ye, meaning "White Leaf," refers to the local cultivar from which this tea is produced. Like other authentic Dan Cong teas, it is harvested from individual tea trees or small populations of the same cultivar, preserving the distinctive characteristics that have made Phoenix Mountain teas highly respected among experienced tea lovers.

The production of Bai Ye Dan Cong follows traditional methods that have been refined over generations. Fresh leaves undergo careful withering, repeated shaking and oxidation to develop their aromatic complexity, before being shaped and finished through slow charcoal roasting. The roasting process not only stabilizes the tea for long-term storage but also deepens its structure, enhances its sweetness, and allows its aromatic profile to evolve over time.

Bai Ye Dan Cong is appreciated for its elegant balance of floral fragrance, mineral character, and natural sweetness. Like the finest Phoenix Mountain wulongs, it reveals new layers of aroma and flavour with each infusion, making it a tea that rewards attentive brewing and patient exploration.

TERROIR
This Bai Ye Dan Cong is cultivated at elevations around and above 1,000 meters. This high-mountain environment is defined by a humid subtropical climate, frequent mist, and pronounced day–night temperature variation. These conditions slow leaf development and allow for the accumulation of aromatic compounds, contributing to both intensity and clarity in the final tea.

The terrain consists of steep, rocky slopes with well-drained soils rich in minerals and organic matter. Tea trees grow under challenging conditions, developing deep root systems that penetrate the mountain substrate. This contributes to the density, resilience, and concentration of the leaf material, particularly important for Dan Cong teas. Microclimate plays a defining role, with diffused sunlight, cloud cover, and consistent air movement regulating plant metabolism. This results in a balanced composition of amino acids and polyphenols, supporting both sweetness and structural depth. Compared to lower elevations, the leaves develop more slowly, producing a more refined and stable raw material.

Another important aspect is the interaction between terroir and tree age. The presence of mature tea trees enhances both aromatic complexity and stability, while the highland environment preserves purity and precision. This integration ensures that the final tea expresses both the distinctive character of Wudong terroir and the depth associated with older plant material.

ORGANOLEPTICS
The dry leaf consists of long, twisted strips with a dark brown to deep chestnut appearance and a subtle glossy sheen, reflecting the careful craftsmanship behind traditional Dan Cong production. Its aroma is elegant and expressive, revealing delicate floral notes intertwined with honey, ripe stone fruits, and a gentle hint of roasted sweetness. In a preheated teapot, the leaves gradually awaken, releasing an increasingly complex bouquet where orchid-like florality is supported by notes of peach, apricot, warm honey, and a refined mineral character. After a quick rinse, the empty cup retains an intense lingering fragrance with floral nectar, ripe fruit, and soft caramelized nuances.

The liquor is bright amber with excellent clarity. The taste is layered and refined, combining floral elegance with natural sweetness, juicy stone fruit notes, subtle honey, and a pronounced mineral structure characteristic of the Wudong Mountains. A gentle, pleasant bitterness appears briefly before transforming into a long, cooling sweetness that remains on the palate for a considerable time. The body is smooth, silky, and well-structured, offering a rich yet elegant mouthfeel without heaviness. Bai Ye Dan Cong develops gradually throughout multiple infusions, revealing new aromatic layers with each brew while maintaining remarkable balance, persistence, and depth.
