HANDMADE WHITE TEA

ORIGIN
Nuwara Eliya is one of Sri Lanka’s most celebrated tea regions, often called the “Champagne of Ceylon tea” for the delicacy, clarity, and refined character of its teas. Located in the central highlands of the island at elevations between 1,800 and 2,000 meters, it is the highest tea-growing area in Sri Lanka and among the most prestigious in the world. The region’s unique terroir is shaped by cool mountain temperatures, misty mornings, and strong seasonal winds, which slow the growth of tea leaves and allow them to develop intense aroma and fine structure. The soil is mineral-rich and well-drained, while frequent rainfall maintains the lushness of the tea gardens. These natural conditions create teas with light body, floral fragrance, and brisk yet smooth flavor - characteristics that define Nuwara Eliya’s signature style.

Tea cultivation began here in the mid-19th century, during the British colonial period, when the area’s cool climate proved ideal for growing high-quality Camellia sinensis. Today, Nuwara Eliya remains home to some of the oldest tea estates in Sri Lanka, many over a century old, still producing small-batch teas by hand using traditional techniques. Teas from Nuwara Eliya are known for their aromatic elegance - whether black, green, or white. The best examples reveal floral and fruity notes, a clean, sparkling texture, and a refreshing, lingering finish. Often compared to fine wine for their sophistication, Nuwara Eliya teas represent the pinnacle of Sri Lankan craftsmanship and the harmony between highland nature, tradition, and artistry.

ORGANOLEPTICS
The dry leaf of White Champagne consists of elegant buds and young leaves with soft silver-green tones, hand-picked and carefully crafted. The aroma is refined and fragrant, with notes of white flowers, honey, and ripe fruit, reflecting the freshness of Nuwara Eliya’s high mountains. When placed in a preheated teapot, the fragrance deepens, revealing warm tones of vanilla, meadow herbs, and light tropical fruit. The aroma feels bright and smooth, carrying both freshness and gentle sweetness.

The infusion is clear and pale golden, with a delicate floral-honeyed scent. In taste, White Champagne is silky and balanced - floral and fruity sweetness blends with a clean, lively freshness and a subtle sparkling sensation on the palate. The aftertaste is long, pure, and slightly cooling, leaving notes of wildflowers and honeyed fruit. White Champagne captures the elegance of Sri Lankan high-mountain terroir - bright, graceful, and full of refined harmony.

GASTRONOMY
White Champagne, with its bright floral aroma and refined sweetness, pairs beautifully with light and elegant cuisine. Its smooth texture and gentle freshness make it ideal for dishes that emphasize purity and balance. It harmonizes perfectly with white fish, shrimp, and delicate seafood dishes, where its floral character enhances natural sweetness and highlights umami. The tea also pairs well with fresh salads, mild cheeses, and vegetable dishes, adding aromatic depth and a clean, refreshing finish. In desserts, White Champagne complements coconut sweets, almond pastries, citrus tarts, and fruit-based desserts, where its honeyed and floral tones bring elegance and harmony. Served warm, it enhances texture and sweetness; served slightly cooled, it refreshes and refines the palate, making it a graceful companion for sophisticated, modern gastronomy.
